Cinnamon Roll Pancakes, Cinnamon Roll Pancakes Recipe

I'm always trying to find new Bed and Breakfast recipes at our Colorado Springs B&B. I made this new Cinnamon Roll Pancakes recipe at our B and B this morning and they were a huge hit, hope you enjoy!

Cinnamon Roll Pancakes


  • 4 Tbsp (1/2 stick) butter, melted
  • 1/4 cup + 2 Tbsp. packed light brown sugar
  • 2 tsp. ground cinnamon
  • 4 Tbsp (1/2 stick) butter, softened
  • 2 ounces cream cheese, softened
  • 3/4 cup powdered sugar
  • 1/2 tsp. vanilla extract
  • 1 cup flour
  • 2 tsp. baking powder
  • 1/2 tsp. salt
  • 1/2 cup whole milk
  • 1/2 cup buttermilk
  • 1 large egg, lightly beaten
  • 1 Tbsp. canola or vegetable oil
  • more oil for the griddle
Prepare the Cinnamon Filling:
In a medium bowl, stir together the butter, brown sugar and cinnamon. Pour the filling into a squeeze bottle, or a zip top bag and set aside.

Prepare the Glaze:
In a small pan, heat the butter over low heat until melted. Pour the butter into a mixer and add the cream cheese; beat until almost smooth. Add the powdered sugar and beat until smooth. Add the vanilla extract; set aside.

Prepare the Pancake Batter:
In a medium bowl, whisk together the flour, baking powder and salt. Add in the milk, buttermilk, egg and 1 Tbsp. of oil. Stir until just moistened, a few lumps remaining is fine.

Cook the Pancakes:
Preheat your griddle to 400 degrees F. Drizzle with oil and pour about a 1/3 cup batter on griddle and spread slightly to create an even circle about 4-inches in diameter. Using the squeeze bottle (if using a zip top bag snip  the corner of the bag and squeeze the filling out of the zip top bag) squeeze the filling on top of the pancake batter in a swirl.

Cook the pancakes about 2-3 minutes before turning, the trick is to wait until bubbles form and start to pop before turning them. Flip and cook pancakes for an additional 2-3 more minutes, until the other side is golden brown.

Serve pancakes with the swirl on top and drizzle with the cream cheese glaze.

Colorado Springs Fine Arts Center Free Family Fun Day

There is much to do in the Pikes Peak area when you're staying with us here at Rocky Mountain Lodge & Cabins. This Saturday, April 21, 2012 is a FREE Family Fun Day at the Colorado Springs Fine Arts Center.

The theme for this event is Recycle and Reuse where participants will be able to create works of art at the Bemis School of Art using materials found around the house. Transform corks into a mosaic, create a mono-print with paper scraps and string or design a cardboard-and-egg-carton sculpture.

Have a family outing day with the kids enjoying artist demos and hands-on art projects led by Bemis instructors.

Little Cheddar Meatloaves, Mini Meatloaves

When I was growing up my Mom made Little Cheddar Meatloaves for us all the time and we loved them as kids. When I was raising our kids our income was small and my grocery budget was quite meager. I learned to feed our family of 5 for anywhere from $5 - $7 per meal. Hamburger became a big staple in our home because it was really inexpensive and I could stretch it. I could typically feed our family with one pound of hamburger for a number of years.

One of the family favorites was my Mom's Mini Cheddar Loaves, as we called them, or mini meatloaves. Now that my children are grown both of my daughters make these as well, so the traditiona continues.

I also found this picture online of a fun way to make them for kids. The Grandkids love them because we then let them eat their broccoli and carrots with their fingers and they think it's so fun to eat "broccoli hands and feet, and carrot legs, and mashed potato tummies.

Here's my recipe for Little Cheedar Meatloaves, I hope you enjoy them as much as we all do.

  • 1 1/2 hamburger
  • 3/4 cups oats
  • 1 tsp. salt
  • 1/2 cup cheddar cheese, grated
  • 1/4 cup onion, finely chopped (or grated if you don't like the onion pieces)
  • 1 egg
  • 3/4 cup milk
  • 1 Tbsp. brown sugar
  • 1 Tbsp. prepared mustard
  • 1/3 cup ketchup
Combine hamburger, oats, salt, cheese, onion, egg, and milk.

Shape into 6 small oval loaves.

Place in shallow baking dish.

In a small bowl combine brown sugar, mustard, and ketchup and spread over tops of loaves.

Bake at 350 degrees for 45 minutes.

Serves 6

For the kids meatloaf bodies, shape meat into 8-10 small round meatloaves and bake without sauce for 35 minutes. Top with ketchup and draw the eyes, nose and mouth with mustard when assembling on plate, along with cooked mashed potatoes, baby carrots, and broccoli tops.
