Puppy Chow Recipe, Chex Muddy Buddies

PUPPY CHOW
(Chex Muddy Buddies)
Our kids have always loved this sweet snack, and it's so easy and quick to make! When our son in law was overseas in Iraq our daughter would make this for him and send it in big batches. The troops devoured it! It's a great sweet snack for those superbowl parties, game day, or other parties. Enjoy!
  • 1/2 cup butter (1 stick)
  • 1 (12-oz) pkg chocolate chips
  • 1/2 cup smooth peanut butter
  • 6 cups Rice Chex or Crispix cereal
  • 2 1/2 cups powdered sugar

Pour cereal in a large bowl; set aside.

Melt butter, chocolate chips and peanut butter in a medium saucepan. Pour over cereal and gently mix until well coated.

Pour powdered sugar into a large grown grocery sack and pour coated cereal into the bag. Close the bag tightly and gently shake until cereal is evenly coated.

Enjoy! It NEVER lasts long because it gets eaten too quickly!

Spinach Artichoke Dip

SPINACH AND ARTICHOKE DIP
  • 1 pkg. Knorr vegetable soup mix
  • 1 (16-oz) container sour cream
  • 1 (10-oz) box frozen spinach, thawed and drained
  • 1 small jar artichoke hearts, chopped (about 1 cup)
  • 3-4 handfuls grated Parmesan cheese
  • 2 loaves round peasant bread, and/or tortilla or pita chips, fresh vegetables, crackers, or other dipping items

In a large bowl combinesoup mix and sour cream. Mix in spinach, artichoke hearts, and Parmesan cheese. Stir to combine. Cover with plastic wrap and chill for 2 hours to blend flavors.

Cut out middle of one loaf of bread and fill with dip. Cut the middle of the bread into bite sized pieces, as well as the 2nd loaf of bread, or skip the 2nd loaf and use fresh vegetables, chips and crackers. Serve with dip.

Alternately, place dip in oven proof casserole dish and bake at 350 degrees for 20 to 30 minutes, until cheese is melted and dip is hot. Serve immediately.

Swedish Meatballs, Swedish Meatballs Recipe

SWEDISH MEATBALLS
  • 4 Tbsp butter, divided
  • 1 cup minced onion
  • 1 lb. 90% lean ground beef
  • 1/2 lb ground veal*
  • 1/2 lb ground pork
  • 1 cup fresh bread crumbs
  • 2 eggs, lightly beaten
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/8 tsp grated nutmeg
  • 3 Tbsp flour
  • 1 1/4 cup milk
  • 1/4 cup half and half
  • 1 egg yolk
  • 1/2 tsp salt
  • parsley, for garnish

*You can ask the butcher at the meat counter for ground veal if you cannot find it in your meat section. Or, you can substitute pork or ground beef for the veal if you cannot get veal. The veal, however, does add to the flavor.

Melt 2 tablespoons butter in large skillet over medium heat. Add onion. Cook and stir 8 - 10 minutes or until onions are very soft. Remove from heat and set aside.

Combine beef, veal, pork, bread crumbs, beaten eggs, salt, pepper and nutmeg in large bowl. Add onions; mix well. Shape into balls (use 2 tablespoons of meat mixture for dinner-sized meatball or 1 tablespoon for cocktail-sized). Set aside.

Preheat oven to 200 degrees. Reheat skillet over medium heat. Add 1/4 to 1/3 of meatballs. Do not crowd pan. Cook 8 minutes, shaking pan to allow meatballs to roll and brown evenly. Reduce heat to medium-low. Cook 15 - 20 minutes or until cooked through. Transfer to covered casserole dish and keep warm in oven.

Meanwhile, wipe out skillet. Melt remaining 2 tablespoons butter over medium heat. Whisk in flour, stir well. Combine milk, half-and-half, egg yolk, and salt in a small bowl. Slowly stir into the flour mixture. Reduce heat to medium-low. Cook and stir 3 minutes or until thickened. Remove dish from oven and pour sauce over meatballs. Place on serving platter, garnish with parsley, and serve immediately, or place in crockpot on low for a buffet. These are also wonderful as a main dish served over hot, buttered noodles.

Makes 72 cocktail-sized meatballs.

Superbowl Recipes

SUPERBOWL RECIPES
One of the best things about the superbowl (besides the game), is the food! I've never been a big football fan, but since my hubby and kids like to watch the game I take pleasure in preparing (and eating) the food! Cripple Creek Ice Festival

CRIPPLE CREEK ICE FESTIVAL


Cripple Creek, Colorado will be holding it's 4th annual Ice Festival in 2011 on February 11th - 13th, and 19th - 21st.

World renowned ice sculptors will use chainsaws and assorted tools to create larger than life "Story Time" where ice carvers incorporate their interpretation of classic literature into art.
This family friendly exciting event is free to the public. It will include several activities for adults and children alike, including an ice maze, an ice slide, the "Dueling Chainsaws" completions, a martini bar, and retail and food vendors will be around as well.

French Onion Soup Recipe

We love French Onion Soup! This French Onion Soup recipe is from my husband's Grandmother and we just love it. Enjoy!

FRENCH ONION SOUP
  • 1 lb. sliced onions (2 - 2 1/2 cups)
  • 2-3 Tbsp. butter
  • salt and pepper to taste
  • 1/4 cup dry sherry
  • 3 cups beef broth
  • 3 cups chicken broth
  • toasted French bread or baguette slices, or croutons
  • 6 tsp. Parmesan cheese
  • 6 slices Gruyere or Provolone cheese
  • parsley

Saute onions in butter until clear. Add seasonings and sherry. Simmer for a few minutes. Add broth and cook for 20 more minutes.

Preheat oven to 425 degrees. Ladle in 6 oven-proof bowls. Add bread, grated Parmesan cheese and a slice of Gruyere or provolone cheese on top. Bake until cheese is melted and starting to brown. Or, you can put them under the broiler for a minute to melt the cheese. Garnish with parsley.

Serves 6.

Fruitcake Toss in Manitou Springs Colorado

Yes, there is such a thing as a "fruitcake toss". The small quirky town of Manitou Springs Colorado hosts this local event every year. It's even been featured on the Travel Channel.
This even features folks hurling fruitcakes through the air via brute force, trebuchets, gun, or canon. All ages from little tikes on up participate in different categories. Bring your own stale fruitcake, or you can rent one for $1.00.
2011 celebrates it's 16th Annual Great Fruitcake Toss in Manitou Springs on Saturday, January 8th, with festivities beginning at 10:00am. Click Here to visit their official website.

Eggnog French Toast

Wonder what to do with that leftover eggnog? Here's a french toast recipe that's perfect for the holidays and throughout the year. Enjoy!

EGGNOG FRENCH TOAST

  • 1 loaf French Bread, Challah bread, potato, or white bread, cut into 3/4-inch thick slices
  • 1 1/2 cups eggnog
  • 1 cup milk
  • 4 eggs, beaten
  • butter
  • powdered sugar
  • maple syrup

Mix eggnog, milk and eggs. Heat griddle to 350 degrees and spread with butter. Dip each slice of bread in the eggnog mixture, allowing to soak for about 15 seconds. Turn and soak other side for about 15 seconds. Place on griddle and brown to a golden brown on each side, about 5-8 minutes per side.

Remove to serving platter and sprinkle with powdered sugar. Serve with warm maple syrup.
